🍝 M A K A Ρ Ο Ν Ι Α Μ Ε Κ Ι Μ Α 🍝
Spaghetti Bolognese, Greek-style! Greek Bolognese sauce is my favourite meal of all time! It differs slightly to its Italian counterpart thanks to the beautiful spices that underpin so many Greek meals; cinnamon, nutmeg and pimento. This recipe is simple but so wholesome and comforting! Top it with grated Kefalograviera and your tastebuds will thank you! 😉
500g beef mince (lean or regular)
1 onion, chopped
3 cloves garlic, crushed
Splash red wine
1 sachet tomato paste
1 can whole tomatoes
Optional: 1/2 small tomato passata
2 bay leaves
1 cup water
Salt and pepper to taste
5 allspice pimentos
2 shakes cinnamon
2 shakes ground nutmeg
Optional: a few shakes of powdered stock
Cheese (grated) of choice: Kefalotyri or Midzithra is beautiful with Bolognese!
1. In a large pot, fry off mince in a lug of olive oil while gently crushing it to separate the meat, about 6 minutes or until no longer pink.
2. Add onions for further 4 mins or until translucent. Add crushed garlic further 2 mins. Add wine until evaporated.
3. Using a large spoon, push can of tomato through sieve (to separate tomato seeds). Add water and (optional) passata.
4. Add seasonings and spices. Simmer over medium heat 30 mins with lid on, checking water levels regularly. Add splash boiling water if required. Simmer until thickened.
5. Boil spaghetti in large pot of salted water according to packet directions.
6. Strain, stir through 20g melted butter and serve with Bolognese sauce and grated cheese. ...
