C​reamy butter chickpeas with rice by @vegamelon 🍛 A delicious comfort dish using coconut milk & spices. RECIPE BELOW!

One-pot butter chickpeas
-1 large onion, diced
-3 cloves garlic + 1 tbsp fresh ginger, minced
-2 green chilis, minced (omit for less spicy)
-1 tsp garam masala
-1/2 tsp each: ground coriander, ground cumin, salt & pepper, paprika
-1/4 tsp each: cayenne, ground mustard
-2-3 large ripe tomatoes (400g), pureed or diced
-1/2 cup water
-1 1/2 cups chickpeas
-3/4 cup coconut cream (from a can of full-fat coconut milk)
In a large pot, heat some oil and add the onion, garlic, ginger, and chilis. Saute for 5 minutes, then stir in all the spices. Once fragrant, add in the tomatoes, water, and chickpeas. Cover the pot and let simmer on medium heat for 10-15 minutes, or until the sauce has thickened. Stir in coconut milk and simmer for 3-4 more minutes. If desired, season with more spices to taste, then serve warm.

Rainbow nourish bowl by @foodpassionical 🌱 Really simple to prepare, this bowl is filled with baked sweet potatoes, cucumbers, purple cabbage, pea sprouts, carrots, quinoa, and stir fried shiitake mushrooms with garlic! What would you include in yours? 🥗

Recipe: (Serves 2)
1⃣1 cup quinoa, rinse throughly under cool running water and drain. Toast the quinoa in a saucepan, stir constantly to let the water to evaporate. Toast about 2 minutes. Next pour in 2 cups of water and salt. Cover and cook for 15 minutes with low heat. Once cooked remove from the heat. Make sure it’s covered and let it stand for 5 minutes.
2⃣1 medium sweet potatoes, cut into bite sized, drizzle with olive oil, salt and pepper. Bake in a preheated oven until golden and ensure it’s cook through.
3⃣8 to 10 shiitake mushrooms (cut off the hard part from the bottom of the stem). Heat 1 tsp oil and add in the mushrooms. Quick mix with 1 tbsp vegan hoi xin sauce, 1 tsp garlic powder, 1 tsp soy sauce, 1/2 tsp sesame oil and 1/2 tsp white pepper and 1/4 cup water. Cook for about 5 minutes with low heat.
4⃣In the meantime, clean and sliced cucumbers, purple cabbages, carrots and pea sprouts. Arrange all the veggies into your favourite bowl with lemon tahini dressing drizzle onto it.
5️⃣For the sauce, whisk together 4 tbsp tahini, 2 tsp your fav sweetener, 2 tbsp lemon juice, 3 tbsp water, salt and pepper for taste.

Recipe 👇
2 Gardein Crispy Chick'n Patties
Lettuce (shred into thin slices)
Sesame Buns (for bun layer simply add bottom of one of these same buns)
Pepper
McChicken Sauce 
¼ cup aquafaba (the juice from a can of chickpeas)
1 tsp apple cider vinegar
¾ cup sunflower oil
½ tsp salt
1 tsp dijon mustard
1 tsp onion powder

Method ~
McChick’n Sauce
Place all ingredients except for the oil in a food processor or blender and combine
Very slowly drizzle in the oil. This will help thé oil emulsify into the rest of the ingredients.
As you add the oil thé sauce will begin to thicken. Allow 1-3 mins for sauce to thicken
Pour thé sauce into a glass container and allow it to set up for at least 1 hour for best results. 
Gardein Chick’n Patties
Preheat oven to 220 degrees C. On a microwave safe dish, first microwave for 2 mins on high then sprinkle black pepper on both sides of patties and place on a non stick pan lined with parchment paper. Bake in oven for 10-12 mins until golden and crispy, turning once.
Assemble the buns and middle bun with the Shredded Lettuce, McChick’n sauce and Gardein Crispy Chick’n Patties and....

GOCHUJANG MAYO DIP
2 tsp gochujang (Korean fermented pepper paste)
3 tbsp vegan mayo
1 clove garlic, crushed/finely minced
1/2 tsp rice vinegar

Pan-Fried Tofu Cakes, anyone? 😋These tofu cakes are super easy to make and pan-fried to a crisp. They’re also best enjoyed with a squeeze of lime juice and some sweet chili sauce! I made this with a mix of tofu and other super simple ingredients, which I then formed into balls before flattening into small cakes. Here’s what you’ll need:

2 (200g each) blocks extra firm tofu, mashed —makes 2 cups mashed tofu
1 large (120g) potato, peeled and shredded—makes 1 cup shredded potatoes
2 carrots (110g total), makes 1 cup shredded
1 1/2 tsp salt, or to taste
1/4 tsp crushed black pepper 
1 cup bread crumbs of choice (I used Japanese breadcrumbs)
1 1/2 tbsp (10g) chopped spring onion 
2 cloves garlic, minced

Batter: 
1/4 cup (40g) all purpose flour 
1/4 cup + 2 tbsp soy milk
1 tsp canola oil or other neutral oil
2 tsp baking powder

For coating:
1 cup bread crumbs of choice (I used Japanese breadcrumbs)

For cooking:
Canola or other neutral oil, for cooking

To serve: 
Lime wedges, for serving
Sweet chili sauce, for dipping
Chopped spring onion, for topping

Все, Новый год повсюду! В песнях, мыслях и на кухне )) А у вас?
Дети ждут Новый год и рядом с ними особенно легко стать волшебником)) И верить в чудеса. 
Задумала для всех своих приготовить какао с маршмеллоу - что может быть более волшебным, уютным??? ☺❄❄ И конечно, маршмеллоу веганский, легкий как пушинка и  #отвалбашни_навсегда 🤪

Ингредиенты:
130г - аквафабы ( я использую жидкость от белой фасоли)
1 ч.л. - лимонный сок (или 1/4 ч.л. винного камня)
1/4 ч.л. ксантановая камедь (iHerb)
50г - вода 
225 г - сиропа топинамбура 
5г - агар-агара (чайная ложка с горкой)
Ванильная эссенция 💛 Приготовление:

Аквафабу переливаем в чашу для миксера и добавляем совсем чуть-чуть лимонного сока (если его нет, можно использовать кем тартар) + 1/4 ч.л. ксантановой камеди.

Отдельно в сотейнике смешиваем 50г воды, 225г сиропа и 5г агар-агара - на огне доводим до 110 С, если нет термометра, то это приблизительно 7-8 минут на среднем огне после кипения.

Ставим на плиту сироп и одновременно начинаем взбивать аквафабу. Она должна стать плотной и увеличится в объеме. Затем на большой скорости мы вливаем горячий сироп в меренгу и продолжаем взбивать еще 3-4 минуты. К этой смеси добавляем ванильную эссенцию. Ваниль даст тот самый нежный вкус привычных нам маршмеллоу🥳

Перемешаем в последний раз и перекладываем силиконовой лопаткой в кондитерский мешок. Смазываем пергамент, либо тефлоновый коврик любым растительным маслом (например, кокосовым) и выдавливаем из мешка длинные полосочки. Посыпаем корицей, имбирем, мускатным орехом или любой другой любимой специей и убираем сушиться на ночь при комнатной температуре в открытом виде 🤩 главное не слопать раньше времени 🤪

Если взять круглую насадку, то из полученной смеси можно выложить различных зверушек, снеговичков, на что хватит фантазии🐻🐰 Или можно просто залить любую форму, утрамбовать, поставить сушиться на ночь и потом нарезать на ровные кубики
